7-Day Two-Meal Plan
Safety Note for Chicken: To cook chicken in a pan for 5 minutes per side, you MUST slice the breasts horizontally into thin 1/2-inch cutlets first. Always ensure the center reaches a safe 165°F.
Day 1
* Meal 1: Canned Tomato Soup with grilled cheese strips for dipping.* Meal 2: Pan-Fried Breaded Chicken Cutlets with Boxed Mac and Cheese and well-cooked canned green beans.
Day 2
* Meal 1: Egg Drop Soup (boil chicken broth, slowly drizzle in whisked eggs until cooked) with buttered toast.* Meal 2: Leftover Chicken & Mac. Chop up yesterday's extra chicken and stir it into warmed leftover mac and cheese, with a side of soft boiled carrots.
Day 3
* Meal 1: Canned Chicken Noodle Soup with saltine crackers.* Meal 2: Cheesy Chicken and Rice Skillet. Sauté diced chicken, toss into cooked rice with melted cheddar and steamed frozen peas/corn.
Day 4
* Meal 1: Cream of Potato Soup topped with shredded cheese, with a dinner roll.* Meal 2: Pan-Fried Breaded Chicken Cutlets with a fresh batch of Boxed Mac and Cheese and cooked frozen broccoli.
Day 5
* Meal 1: Leftover Potato Soup with a simple deli turkey or ham sandwich.* Meal 2: BBQ Chicken Quesadilla. Sauté chicken strips, toss in BBQ sauce, melt inside a tortilla with cheese. Side of cooked canned corn.
Day 6
* Meal 1: Canned Vegetable Soup with tortilla chips.* Meal 2: Chicken Alfredo Pasta. Penne pasta with jarred Alfredo sauce, topped with pan-fried chicken strips and soft cooked frozen peas.
Day 7
* Meal 1: Cream of Mushroom Soup with a grilled cheese sandwich.* Meal 2: "Everything" Mac & Cheese. Prepare a box of Mac and Cheese, stir in any remaining chicken and leftover cooked vegetables.
